The darker batches we gather in late autumn pack a heartier flavor and tend to be a bit more nourishing than the lighter honey we harvest earlier in the summer.

Our local honey is fresh, delicate, and uplifting. Extracting honey from the honeycomb and then straining it to remove impurities like beeswax and dead bees, while intentionally avoiding processes like pasteurization and fine filtration. This method aims to preserve the natural properties and beneficial compounds of the honey, such as pollen, enzymes, and antioxidants, as it exists in the beehive.
